De Lossy Brut

T22 – Tirage of the 161ST year

2021 was a year of climate adversity dominated by extremes, with heavy rain in the spring and thunderstorms and hail in the summer. Only the best winemakers selecting the best grapes with the finest comb were able to find exceptional fruits with great ageing potential. 2021 was also a year when the old Grand and Premier Crus came clearly on top after the chaos of the growing season.

This was not an easy assemblage to make, and our winemaking team produced 25 different blends before selecting Blend Number 6 from the Chef de Caves’ own precise balancing act between on one side the bright and freshest fruits selected from Harvest 2021 and on the other side the complexity brought by reserve wines going as far back as 2013.

Overall blend: 29% Chardonnay, 36% Pinot Noir, 35% Meunier

A wealth of fresh red berries dominates this Brut, with marvelous strawberry flavors the way you would taste them when consuming the finest and lightest patisserie at a 3-star restaurant. Some fresh clementine and fresh orange peel aromas complement this sweet and acidic explosion of flavors in the mouth.

On the nose, what immediately charms you is a rich palate of fresh fruits picked at their peak of ripeness in summer. Red currant, blackberries and ripe apricots dominate this rich and well-structured wine.

wine-pairing

Pairing suggestions

For a wine as complex and layered as this 2021 blend, pairing it with food that can both complement and elevate its flavors is key. Given the freshness of the red berries, citrus notes, and the complexity from the aged reserve wines, we recommend dishes that have a balance of richness and freshness, as well as a bit of contrast to highlight the wine’s vibrant acidity and depth.

Lobster with a citrus beurre blanc

The bright citrus notes in the wine will play beautifully with the buttery richness of the lobster and the fresh acidity of the beurre blanc.

Grilled scallops with citrus glaze

The fresh, delicate flavors of the scallops will harmonize with the wine’s fruit-forward profile, while the citrus glaze adds a refreshing contrast that mirrors the clementine and orange peel aromas in the wine.

Prosciutto with melon or figs

The sweet, salty combination of prosciutto and fruit complements the wine’s red berry and clementine notes, with the Meunier’s aromatic complexity offering additional depth.

Strawberry or raspberry tart

The fresh red berry notes in the wine would pair harmoniously with a fruit-based dessert. A strawberry tart with a crisp, buttery crust would beautifully mirror the wine’s fresh, light profile.

Citrus-infused pastries or sorbet

Given the orange peel and clementine aromas in the wine, a citrus-based dessert like an orange blossom sorbet or a lemon meringue tart would be an exquisite match.

rosé

De Lossy rosé

T22 – Tirage of the 161ST year

Our 161st year Rosé focuses on bringing strength and generosity from Pinot Noir. This Rosé from assemblage is carefully elaborated with a beautiful red wine from Verzenay Pinot Noir from 2021. In any year with some climate adversity, you either get disappointed or you find the most exceptional fruits that remained bright against all odds. With the serious efforts they put into carefully selecting individual grape clusters during the traditional manual harvest, our winemakers can find extraordinarily fresh and bright flavors.

However challenging and time-consuming that task is, when your sole focus is finding the exceptional and ignoring volume limitations or constraints, you can make exceptional wines in most years. It does take a very coordinated approach with our vineyard teams and the acceptance that we may occasionally reject more grapes than we keep. That is the price to pay for constant superior quality.

Overall blend: 47% Pinot Noir 29% Meunier 24% Chardonnay

buffet

This Rosé bursts with vibrant red fruits—strawberry, cherry, raspberry—like a summer tart made from just-picked berries. On the palate, Pinot Noir brings depth and structure, Chardonnay adds crisp freshness, and Meunier lifts it all with floral and lightly spiced notes. The nose is a rich bouquet of ripe red fruits, blood orange zest, and a hint of pastry cream. A Rosé of charm and precision—elegant, generous, and beautifully balanced.

This is a Rosé built for pleasure, yet crafted with precision. The wine’s structure and aromatic generosity reflect the careful selection of Grand and Premier Cru grapes, blended with reserve wines that lend both maturity and complexity. A wine of character made to be remembered.

Pairing suggestions

This Champagne Rosé offers a beautiful balance of Pinot Noir’s richness and the bright, fresh flavors from Chardonnay and Meunier. Given the wine’s aromatic complexity, fruit-forward profile, and elegant richness, here are a few pairing suggestions that would complement its nuances:

pairing

Oysters, lobster, or scallops

Particularly those served with a light citrus dressing or a delicate butter sauce. The fresh acidity and the red berry and cherry notes of the Rosé will complement the sweetness of the seafood, while the richness of the wine enhances the delicate flavors of shellfish.

Prosciutto

Prosciutto, salami, and other cured meats

Served with fresh figs, strawberries, or even a light honey drizzle. The wine’s richness and structure from the Pinot Noir work beautifully with the savory, salty flavors of charcuterie. The red fruits in the Rosé will enhance the sweetness of figs and strawberries, creating a harmonious contrast.

summer salad

Summer salad

With mixed greens, goat cheese, and strawberries or a quinoa salad with fresh herbs and pomegranate seeds. The freshness and lightness of these dishes work well with the crispness and red fruit flavors of the Champagne Rosé, while the wine’s richness enhances the earthy flavors of the greens and grains.

Asian-style pork

Asian-style pork

With berry compote with a light hoisin glaze or Asian-style marinated salmon. The wine’s complexity and acidity pair beautifully with the umami and slightly sweet/savory notes of Asian dishes. The fruity character of the Rosé complements both the fish and the pork with the sweet-savory flavors in the sauce.

fruit tarts

Fruit tarts

If you still have an appetite after the above feast, we may suggest fruit tarts (especially those with berries), strawberry shortcake, or a delicate raspberry soufflé. This Rosé Champagne’s fruit character mirrors the flavors in berry-based desserts, while the wine’s acidity and richness work to balance the sweetness of the pastry, creating a bright and refreshing finish.

We invite you to celebrate every step, moments, journey. Here is some suggestion on how to serve our champagne De Lossy, but the only things that really matter is the toast we cheers to life. Champagne is never just about what’s in the glass—it’s about who you share it with.

For the perfect experience, we recommend chilling your bottle to 37°F (3°C), allowing the wine to be served well below 46°F (8°C) to preserve its crisp elegance. Pour just a little at a time, keeping each sip as fresh as the moment. A tulip-shaped glass will reveal every nuance, letting the aromas unfold beautifully.

drinking
_field_picnic

The soft pop of the cork, the quiet laughter woven into the clink of glasses, the golden glow of the cuvée as bubbles rise and dance. The cool touch of the wine, the delicate balance of flavors. A moment to pause, to savor, to share.

Because champagne is more than a drink—it’s a celebration of those who make the journey unforgettable.
